As part of the Melbourne food & wine 2026, Chefs Ian Curley and Robin Wickens will join forces to bring the two-hat Wickens at The Royal Mail Hotel dining experience from the steps of the stunning Grampians region to Brighton's beloved Baix. Guests will be treated to a refined four-course dining experience showcasing peak-season produce from the Royal Mail Hotel's sprawling kitchen garden (the largest in Australia) and gain access to rare wine varietals from the award-winning Royal Mail Cellar.
